Karanji is a crescent-shaped, deep-fried pastry that is mostly associated with Maharashtra. It consists of thinly rolled dough and a filling consisting of fresh or desiccated coconut, cardamom, and crushed nuts such as cashews, almonds, or pistachios.
Sometimes it includes rava (semolina), poppy seeds, jaggery, and raisins. The dough is folded in a half-moon shape, and the pastries are then deep-fried until golden. Karanji is traditionally enjoyed for Diwali or Holi festivals. It is similar to the northern Indian gujiya, which can be baked or fried and typically does not include coconut.
